From Hospitality Management to Food Industry Regulation
Since October 2025, Sam Ryan has worked as a Regulatory Associate at Foodwit, a consulting firm that specializes in food safety, regulatory compliance, quality assurance, and labeling for food and beverage businesses.
In his current position, Ryan works with food and beverage brands to ensure their products comply with regulatory requirements before reaching consumers. His responsibilities include advising companies on food safety standards, ingredient and product compliance, labeling regulations, and broader regulatory strategies that help businesses navigate an increasingly complex food industry.
His current role represents the latest step in a steady career progression at Foodwit. Ryan joined the company in February 2022 as an Executive Assistant before advancing to Marketing and Operations Contractor, then Operations Associate, and ultimately earning promotion to Regulatory Associate after more than four years with the organization.
That progression reflects both his growing expertise and his ability to combine operational leadership with technical regulatory knowledge. Today, he works at the intersection of business operations, food science, and government compliance, helping brands meet evolving industry standards.
Helping Launch The Rabbit hOle
Alongside his work at Foodwit, Ryan played a major role in one of Kansas City’s most ambitious cultural projects as Guest Services Director at The Rabbit hOle during 2023 and 2024.
The Rabbit hOle is an immersive museum dedicated to children’s literature, and Ryan helped shape many of the systems that visitors experience today. Working directly with the museum’s founders, he led the guest services department while developing ticketing systems, membership programs, guest service protocols, and staff and volunteer training programs.
One of his most significant responsibilities involved overseeing the creation of Max’s Kansas City, the museum’s café. Ryan supervised the café’s design and build-out while coordinating the health department approval process required before opening.
Launching a completely new museum required balancing customer experience, operational planning, hospitality management, food service regulations, and staff development. The project demonstrated Ryan’s ability to lead complex, multidisciplinary initiatives while maintaining a focus on both operational efficiency and visitor satisfaction.
An Extensive Career in Hospitality Leadership
Before transitioning into regulatory affairs, Ryan spent years managing restaurants and hospitality businesses across several major American cities.
One of his most prominent roles came with Submarine Hospitality in Portland, Oregon. There, he served as General Manager of Ava Gene’s, one of Portland’s best-known restaurants, before also becoming General Manager of Tusk, another highly regarded establishment within the restaurant group. He later advanced to Director of Restaurants, overseeing operations across multiple venues.
Earlier in his career, Ryan worked for several nationally recognized culinary organizations. He served as Assistant General Manager and Beverage Director at Thomas Keller’s Bouchon Bakery, helping oversee operations for one of America’s most respected hospitality brands.
He also worked as Front of House Beverage Manager at David Chang’s Momofuku, another internationally acclaimed restaurant group known for its influence on contemporary American dining. These positions exposed Ryan to premium hospitality, beverage management, staff leadership, and high-volume restaurant operations.
His résumé also includes leadership positions at Jeffrey’s and Josephine House in Austin, management roles at Frankies 570, Frankies 17, and Francesca, along with earlier service positions at Craigie on Main and the internationally renowned Per Se in New York City.
Consulting, Restaurant Openings, and Operational Expertise
Ryan’s career also includes consulting work and major restaurant launch projects that strengthened his expertise in operations and project management.
Following the COVID-19 pandemic, he worked as a Food and Beverage Consultant for The Suttle Lodge & Boathouse in Oregon. His work focused on refining service standards, updating operational procedures, and creating new training documentation as hospitality businesses adapted to changing industry conditions.
He later became the Opening Manager for Portland’s first Shake Shack, overseeing one of the company’s highest-profile regional launches. His responsibilities included recruiting and training staff, maintaining food quality and safety standards, supervising customer service, and managing the opening of a high-volume restaurant.
Earlier in 2020, Ryan joined New Seasons Market as a temporary employee during the COVID-19 response before quickly earning promotion to Lead Cashier, demonstrating his leadership abilities during an especially challenging period for the food and retail industries.
These varied experiences gave Ryan practical expertise in restaurant operations, food safety, employee development, and project management that would later prove valuable in regulatory consulting.
Education and Professional Development
Although his professional career has centered on hospitality and food regulation, Ryan’s academic background is rooted in the creative arts.
He attended New York University from 2004 to 2008, earning a Bachelor of Fine Arts (BFA) in Writing for Film and Television. While the degree may seem unrelated to his current profession, the communication, organization, and analytical skills developed through creative writing have complemented his later leadership and consulting work.
Over time, Ryan successfully transitioned from creative studies into hospitality management before expanding into operations, consulting, and regulatory affairs. His career illustrates how transferable skills can support success across multiple industries.
His professional expertise now includes food safety, food labeling, regulatory compliance, product compliance, restaurant management, food and beverage operations, project management, hospitality leadership, customer service, and wine program management.
Community Service and Professional Interests
Outside his professional career, Ryan is actively involved in literacy education through volunteer work in Kansas City.
Since August 2024, he has volunteered with Lead to Read KC, conducting weekly one-on-one reading sessions with students at Académie Lafayette. The program supports literacy development by pairing volunteers with children to encourage reading skills and confidence.
Ryan also maintains an active presence within the food and hospitality community through LinkedIn, where he follows developments across restaurant operations, food regulation, hospitality management, and compliance.
